This decaffeinated coffee has a soft, velvety taste with less than 0.1% caffeine. It offers a perfect balance of acidity and bitterness, with delicate notes of caramel, chocolate, and toasted bread, finished with a sweet aftertaste. Best enjoyed in 25–40 ml servings.
When coffee comes into contact with air, 40% of its aroma is lost within eight hours. To preserve freshness, coffee is typically vacuum-packed. However, illy has used a different, patented technology for decades. In illy cans, inert gas (nitrogen) is pressurized, capturing and fixing the aromas for long-lasting protection. Like fine wine, coffee in illy cans matures, developing a rounder, more refined flavor. Nitrogen is not an additive and immediately dissipates once the can is opened.
