The illy blend consists of nine Arabica varieties, sourced from the best harvests across three continents and picked by skilled coffee pickers. Each variety contributes a note to the final cup. The proportion of each Arabica is constantly evaluated to ensure a consistent and perfect flavor — the unique illy taste known worldwide for over 80 years.
When coffee comes into contact with air, forty percent of its aroma is lost within eight hours. To preserve freshness, coffee is often vacuum packed. Illy has long used a different, patented technology. In illy cans, inert gas is added under pressure, locking in and protecting the aromas for an extended period. Just like a fine wine, coffee in illy cans becomes more refined, with a rounder flavor that lasts longer. The inert gas (nitrogen) is not an additive and dissipates immediately once the can is opened.
